
This recipe I have fallen in love with and is perfect for any time of year. I love the fresh bright flavors that remind me so much of summertime, while it is just as easily adaptable during the cool and colder months. What makes this so delicious is the freshness is the lemon zest, the richness of the goat cheese, and the texture contrast in the middle of the burger with the Pine Nuts. You can't go wrong here.
Dinner for 2-3
Ingredients
- 1 Pound Ground Lamb
- 1 ½ tbsp Extra Vigin Olive Oil
- 2 tbsp each of:
- Minced shallots
- Minced Roasted Red Bell Peppers
- Coarse Ground Pine Nuts
- Chopped Mint
- 1 tbsp each of:
- Garlic, finely minced
- Lemon Zest
Preparation
- In Sautee Pan over medium-low heat add Extra Virgin Olive Oil, and combine shallots, Roasted Red Bell Peppers, Pine Nuts and Salt and Pepper to Taste
- Sweat for 3-4 minutes and add Garlic and Lemon Zest and cook another 3-4 minutes
- Allow to cool, and add 1 tbsp Goat Cheese and mix
- Add Lamb, and incorporate all ingredients and portion into 3 patties
- Sear in a pan on medium-high heat for 4 minutes on one side and flip
- Add goat cheese on top, and broil for 4-5 minutes for medium
