Strawberry Laced Pancakes

A Blast from the Past
I think pancakes are the very first thing I ever learned how to make - either that or grilled cheeses, and I think that is true for much of our Nation's youth.  The only difference is now I have learned how easy it is to make my own batter - eliminating the dependency on some premade Bisquick or otherwise product.  This way - I get them how I like them, and I promise you - they are damn good!   Try this recipe out for try this weekend at the house - you won't regret it.


Strawberry Laced Buttermilk Pancakes
Serves Breakfast for 4
Ingredients:
2 Cups All Purpose Flour
2 Cups Buttermilk
2 Eggs, whisked
1 Tbsp. Baking Powder
1/2 tsp. Baking Soda
1/2 Cup Sugar
1/2 tsp. Salt
1/2 Cup Strawberry Preserves

Preparation:
Mix Dry Ingredients.
Add Wet, incorporate, but don't over mix.
Cook on Medium-High Heat in greased pan.
When bubbles appear over a large percent of pancake, flip
Cook another 2 mnutes
Remove from pan, and keep warm in 200 degree oven until the rest of the batch is done
