Cool off with this Super-Fresh Summer Cocktail

Hot weather for me just lends itself to fizzy, bubbly, fruity cocktails. Mulled, spiced, and non-carbonated drinks have their place with sweaters, boots, and cooler weather. While the weather has cooled down a bit since the Dante's Inferno style heat wave we had recently, its still definitely summer out there, which merits a refreshing cocktail to cool yourself down. This Peach Mint Fizz does just that- and it comes together in a flash. With the supermarkets currently stocked to the brim with fresh peaches, this peach fizz is easy, refreshing, and appropriately seasonal. There's no better way to enjoy the last bit of summer produce overflow before we slide slowly into fall.
Get a sieve and press 3 or 4 chopped up peaches through it. To get all the good pulp through, pour over a splash or two of gin (I use Tanqueray), and smash everything through with a spoon. Alternatively you could wiz up the skinned and pitted peaches through a blender before proceeding. Add four tablespoons of agave nectar or honey to the mix, and stir in your desired amount of alcohol, keeping in mind this recipe makes four cocktails. You could certainly use vodka in place of gin, or even tequilla if you're so inclined, but I have a particular bent towards gin. This mix will keep well in the fridge until you're ready to use it. When you're ready to serve, fill a glass with ice and then fill it half way up with the peach mint mix. Then just top up to the brim with your favorite sparkling water or tonic, garnish with a squeeze of lime, and enjoy!
